65 Calorie Tuna Salad

My youngest daughter had her Iron level tested recently, to find out her level was quite low. So we have to take extra care to make sure she is getting a sufficient amount of Iron in her diet. As well as a good amount of Vitamin C; Vitamin C helps the body to absorb Iron into the body. Learn something new everyday huh? Well, actually I probably learned that in school and chose to forget it. When are you gonna ever need that bit of information, right? WRONG.

Anyway... one of things I am trying to do for her, and everyone in my family, is adding spinach to things we already eat. Raw spinach doesn't have a ton of flavor therefore its a 'quick fix' to our Iron problem. So, I decided to make a batch of my Low Calorie (But Oh So Good) Tuna Salad.


Ingredients:

1 can Chunk Light Tuna
1/4 cup sweet pea
1/4 raw celery
1/2 cup baby spinach
1/4 cup carrots
1/4 cup cucumber
1/4 cup red onion
2 TB-spoons Light Ranch dressing
splash of pickle juice
1 TB-spoon Frank's Red Hot Buffalo Sauce

This recipe makes about 4 servings. So thats 65 calories per serving. 
Take that you super fattening store bought Tuna Salad!

Meal ideas:
Grilled Wheat Tortilla Wrap +130 cals
Mixed Greens Salad +15 cals
Wheat Crackers +60 cals

This year was the year of weddings for us (as was last year). So we had to get creative as far as gifts. Here are a couple handmade gifts...

This jar has a years worth of date ideas. 


Inside are popsicle sticks color coded (with their wedding colors of course) 
yellow= stay in date night 
blue=go out date night

The idea is to enjoy your first year of marriage with inexpensive or free date nights each week.

I hope Matt & Logan are enjoying their gift. The first year of marriage can be a crazy one. 
Enjoy every minute!


This was for another friend of ours. Coffee mugs with matching plate set. As well as a serving platter for when entertaining guest.


This was done in sharpie.


Then baked for a couple hours at a low temperature.



The platter has their wedding date on it as well as the lyrics of their first dance.
